So good to hear from you again! I was going through some of your old posts a few weeks ago and you inspired me to cook slightly differently. I’ve gotten over my fear of traditional Italian cooking styles and made myself a lovely simple pasta dish just an hour before you sent this email. Other than adding a bit too much salt, it was lovely. You inspire us to eat well. So glad you are feeling better.

I love that you've been experimenting with Italian cuisine, and really, simplicity is at its heart so no need to be intimidated. A simple, juicy pasta sounds delicious, just make sure to balance the salt in the cooking water and the sauce and you should be good to go :) keep me posted! big hugs xx
